If you go to a site such as http://www.youtubia.com/ you can download and save them, or add DownloadHelper to Firefox – https://addons.mozilla.org/en-US/firefox/addon/3006 Since version 3.1, you can setup the extension to automatically convert the downloaded movies to your preferred video format.

To play them in existing format, download FLV Player or VLC Media Player

VLC Media Player has heaps of video codecs. It can also be used as a server to stream in unicast or multicast in IPv4 or IPv6 on a high-bandwidth network.
